Quests is the only way of unlocking Rebirth: Melee Styles, Rebirth: Player Race and more. Without completing certain quests, there is no way you can continue with obtaining the items/styles/race you want or to awaken these races.
How to find quests?
Quests can be found by simply going to NPCs, and clicking them on. When you have done so, you can simply follow the dialogues, start the quest and follow the instructions/objectives set by the NPC.
